Caprese Shrimp Fonduta

A creamy cheesy dip made with pesto and shrimp.

Directions:                    

  1. Preheat oven to 400°.
  2. In a small bowl, toss to combine bread crumbs, parmesan cheese, parsley and butter. Set aside.
  3. In a large bowl, combine shrimp, pesto, mozzarella, heavy cream, salt and half of the bread crumb mixture. Toss until combined. Place tomatoes at the bottom of a 9" pie pan; cover with shrimp mixture. Top with remaining bread crumb mixture and bake for 20-30 minutes or until golden brown on top and cheese is bubbling.
  4. To serve, spoon over toasted baguette slices.
